About Us
Pembroke Bakery was created by husband and wife duo Courtney and Tyler, and is proud to be a veteran and women owned company built on a shared belief that baking is an act of care. Inspired by Courtney’s personal journey navigating endometriosis, they set out to create cookies made with thoughtfully sourced ingredients that feel as good to enjoy as they do to share. Today, they continue to grow Pembroke with a focus on quality, connection, and creating meaningful moments through every batch.
